  • Calcium Chloride (Sweetness and Texture): Calcium adds body and a creamy"juicy" mouthfeel, which is often needed to balance the sharp, sometimes thin, acidic notes of a highly fermented coffee. It helps to accentuate sweetness, creating a, balanced, and clean, rather than sharp, experience.
